Fresh Recipe Ideas : Snap Peas

Sweet Sugar Snap Peas from the Garden
As a first time gardener, I have to say - it's so amazing that sugar snap peas taste amazing because they grow oh so easily!  So you better have a few tricks up your sleeve for cooking these suckers! (for when you don't want to snack on them raw anyways)

The Recipe

This is such a great snack on it's own as an appetizer, or can also be a great side to a great fish, chicken or marinated beef steak from the barbecue.

Before I get started, I have to say this is basically my all time favourite way to eat these. It's just unbeatable.

Ingredients

- Snap peas
- Water
- Salt
- Chilli Pepper Flakes
- Honey
- Ginger
- Garlic
- Cashews, Peanuts
- Soy Sauce
- Sesame Oil
- Vegetable oil

Process
  1. Heat a non stick fry pan on medium high
  2. Add a teaspoon of vegetable oil with a teaspoon of garlic and a teaspoon of ginger, give a couple tosses. It should at least be sizzling for a bit, not really browning. Add two pinches of chilli flakes. 
  3. Add two big handfuls of fresh snap peas. Strings removed. Toss or stir about for a moment or two. Give a little squirt of water. Like a tablespoon or two and quickly cover the pan with a lid to keep some steam in, to expedite a quick cooking of the peas. Moreso a warming. 
  4. Add a tablespoon of honey to the pan. Toss around. season with some salt. Give a bean a taste. It should make your mouth water at this point. 
  5. Right before the peas are warm, ready to come off, toss a couple pinches of crumbled nuts into the pan, season with a splash of sesame oil and you should be ready. 
  6. Your peas are getting overcooked when they go to more of an olive green, or if they start to get wrinkles in the outer skin almost for lack of a better description. 
  7. Plate them and enjoy. 
  8. The bright vibrant green of the beans look great with a little super fine julienne of some fresh red pepper. Whether you use sweet bell, or a spicier variety is up to you.  Or use some julienned orange carrot as an alternative.
This is a dish that can get really spicy, really sweet or really salty depending on how you're feeling at that exact moment! Go crazy with it and make your own balance of flavours.  Sambal Oelek and Sriracha sauce are great heat alternatives.  Soy sauce can be good to add a little more sodium to get your mouth watering when you taste it. And honey. well loads of honey is great especially if you're piling the ginger and garlic on heavy!

Also, if you don't use the soy sauce for seasoning, its gluten, vegetarian, vegan and dairy friendly!
